Featured Recipe: Chilli (Beer Edition) - Sam Smiths – Chocolate Stout

  • 500g minced beef
  • 2 onions, chopped
  • 400g tin red kidney beans drained and rinsed
  • 400g tin chopped tomatoes
  • 2 peppers, diced
  • 3 garlic cloves
  • 2 tbsp plain flour
  • 3 tbsp tomato puree
  • 3 tbsp dark brown sugar
  • 300ml beer
  • 150ml beef stock
  • ½ cup strong brewed coffee
  • 1-2 tsp hot chili powder
  • 1 tsp paprika
  • 1tsp ground cumin
  • 1 tsp ground coriander
  • Hendos


  1. In a large saucepan, on medium heat, add the onions and minced beef. Cook for 5 minutes, whilst stirring to break the mince up. Add the garlic, chili powder, paprika, cumin and coriander and cook for another 1-2 minutes.
  2. Add the flour to the pan and stir well, slowly add the stout and the stock, stirring continuously. Add the tomatoes, kidney beans, tomato puree, sugar, oregano, bay leaf and a splash of hendos to the pan and stir well. ‘
  3. Season, bring to a simmer then cover loosely with a lid, leave to simmer gently for 45 minutes, stirring occasionally until sauce is reduced. Season to taste.
