Featured Recipe: ROAST SEA BASS & VEG TRAY BAKE

Ingredients


  • 300g Red-skinned potato, thinly sliced into rounds
  • 1 Red pepper, cut in strips
  • 2 TBSP extra virgin olive oil
  • 1 Rosemary sprig, leaves removed, chopped finely
  • 2 Sea bass fillets
  • 25g Pitted black olives halved
  • 1 Half of lemon, sliced in rounds
  • A handful of basil leaves

Method


Step 1 = Heat oven to 180c. Arrange the potato & pepper

Slices on a non-stick tray, drizzle 1tbsp of oil and

Scatter rosemary, a pinch of salt n pepper, toss and

Roast for 20 min, turning halfway, until potatoes golden.

Step 2 = arrange fish fillets on top & scatter

Over olives, place a couple of orange slices on fish

Drizzle rest of oil, roast for further 8 min,

Serve with a scattering of basil leaves.
